Olla de la plana – Stew la Plana style


  • garlic
  • tomatoes
  • bacon
  • pig's ear and snout    ear and hognose
  • onion black sausages
  • cabbage leaves
  • spinach
  • cardoon
  • green beans
  • turnip
  • potatoes
  • beans 
  • chickpeas
  • rice
  • water
  • salt

Sauté garlic and tomato in a clay pot and then add some small pieces of bacon (preferably fresh), a piece of ear, a piece of pig snout and the onion sausages.

When the sauce is cooked, join cabbage leaves, spinach, cardoon, green beans and a piece of turnip (all the vegetables diced). After gently fry everything, add water, potatoes cut into pieces, beans and chickpeas (which have been soaked from the previous day). Simmer it for an hour and season with salt. You better place a clay pot filled with water at the mouth of the main pot.
When everything is cooked, add the rice (first measured amount), and serve when ready.
