‘Pastís’ - Vegetable and tuna pie

This ‘pastissos’ (pies) are an authentic Ondanian typical product, as well as the vegetable and tomato cakes. Formerly they were prepared on Friday for eating at dinner, but now you can find pastissos all days of the week.

- For the dough:

  • 125 ml olive oil
  • 250 ml water
  • wheat flour (as much as needed)
  • salt
  • yeast (from bakery)

- For the filling:

  • 1 onion
  • ½ kg chard or spinach
  • 2 ripe tomatoes
  • parsley
  • hard-boiled eggs
  • tuna
  • pine nuts (optional)

Pour the oil, water, yeast and salt in a bowl and stir well. Flour is added until it will not stick to the work bench or hands. Then, allow standing until the dough rise.
For the filling, fry the tuna first and then the chopped onion, chard or spinach too. Add the tomatoes, season with chopped parsley and finally join one hard-boiled egg cut in small pieces and pine nuts. Stir everything.
Make thin pancakes with the dough –round shape the size of a plate. In the middle, place the filling and turn over the other half covering it, then flatten the two sides and pinch to shape it as a string. Make a hole in the centre, paint with beaten egg and put it in the oven.
