‘Pilotes de frare’ – Friar Balls


  • 1 egg
  • 1 cup of milk
  • ½ cup of sugar
  • 3 tablespoons olive oil
  • 1 piece of yeast pill
  • 1/2 kg sugar (more or less)

Beat one egg with sugar and add the milk before mixed with yeast, oil, and flour. Work the pastry and leave it in a warm place until it raises twice its volume.

Once got it, take small pastry portions and make small balls, and again leave them stand until its volume increase. Then, put in the oven or, if you prefer, fry them with very hot oil.
When the balls will be cooler, fill them with pastry cream. If fried, coat them in sugar.
